The catering and hospitality industry is diverse, providing meals and snacks for millions of people every day. Food business operators are increasingly aware of the requirement for a suitably trained, professional workforce to ensure safe and timely delivery of food service operations which is constantly developing and changing. The course curriculum includes the latest approach to food safety, health and safety legislation and current industry practices and trends. Learners will be able to prepare, cook and present a range of complex patisserie and confectionery items to a high standard, specialising and developing skills in these areas n a real working environment.A wider knowledge of the programme units will be explored throughout the course. Through participation of the practical tasks completed and theory test papers, testing knowledge further. This level 3 course provides an extensive exploration of all aspects of current industry operations and standards, essential for those aspiring to work at a higher level in patisserie and confectionery in the industry today.

What can I do next?

The Level 3 Diploma in Patisserie and confectionery could lead to supervisory and managerial posts in the industry, working as a pastry chef. This specialised area is an exciting place to work in, especially if you are creative and ambitious. An industry full of opportunity and wide choice of places to work and develop skills further moving on from level 3.Once leavers have gained experience, they may supervise others and manage resources. With experience and ambition will want to further to develop their own skill set through training and perhaps go on to work as a renowned pastry chef, restaurant manager, or even branch out on their own venture or establishment in this fast paced industry.

What will I be doing?

Current food safety legislation.Health and safety in catering.How to prepare, cook and present more complex creations and patisserie items including; Chocolate work, hot and cold desserts, sugar work, cake decorating, pastries, glazes, sponges and sauces. Students will be taught how to develop their talents and skills in this creative subject, improving their confidence and capabilities to a higher standard. In line with current industry standards and presentation methods.The students will be assessed on their practical skills and knowledge throughout the course and will be required to complete a portfolio of evidence, including photographic evidence of their work to support this.Work experience, visits and demonstrations from professionals will also enrich the learning further.

Work in a variety of prestigious settings to prepare, cook and plate food to a high level standard. In some places, such as smaller kitchens, roles may be minimalistic and straight forward but the industry is really in search of great people. Full-time work is common and if there is potential in an individual they will progress quickly. Developed links with employers is good.Some higher level learners have been placed in prestigious restaurants in London from D&D group, The Ritz and The Shard, with a chance of gaining full-time employment after completing their course.Real working environment, developing skills and attributes for further progression.Experience of working in a real restaurant, The Atrium, producing food for paying customers.Use of up to date industry standard equipment.Help with CV writing, assessments and job applicationsReduced cost of gym membership.Free Daily Enrichment activities. Entry requirements

To have gained a Level 2 qualification previously and have a positive attitude to learning and an avid interest in patisserie in particular and the creation of more complex food items. Preferably level 4 qualifications in both English and Maths.

Fee Information

Free to Home students under 19 on 31st August 2023.
 
If you are a Home student aged 19 or over on the 31st August 2023, you may be liable to pay approximately £2,500 tuition fee for a Level 2 qualification and approximately £5,000 for a Level 3 qualification (these were the tuition fees for 2022/2023 and could be subject to change for 2023/2024).

If you are aged 19-23 you may also be entitled to free tuition if the course you choose is on a government-approved list and the qualification is your first full Level 2 or Level 3 qualification.

If you are aged over 24 and you have not achieved a full Level 3 qualification you may be entitled to free tuition if the qualification is listed on the Government Free courses for jobs list. Similarly, if you already hold a Level 3 qualification (or above) and meet the Adult Education Budgets definition of unemployed or are in receipt of low wage, you may also be entitled to free tuition.

You may also be required to pay an administration fee, exam fees, kit fee and an Awarding Body Registration fee if applicable.

These fees are indicative of the 2022-23 costs and may be subject to change
